I wanted to start my Saturday with a bowl packed with nutritious ingredients and bursting with flavours and textures. With at least three superfoods in the line up, this salad is perfect for days when you just want to feel good about what you put in your body.

Ingredients (for one)

1 small/medium avocado, peeled and chopped into bite size pieces
1 flat peach, chopped into small pieces  
75g blackberries
35g peashoots, purple radish and garlic chives (or your salad leaves of choice)

For the dressing
6 tbsp extra virgin olive oil
2 tbsp white wine vinegar
1 tbsp pomegranate molasses
salt and peppper

Method

Combine the salad ingredients in a bowl.

Measure out the dressing ingredients into a jar and shake well before drizzling over your salad bowl (there will be plenty of dressing left for tomorrow's lunch too).
