I originally intended to make a Caribbean fish curry this evening, but was disappointed when I found that the recipe listed 2 tbsp of Caribbean curry powder amongst its ingredients.

This sent me off on a diversion to find a blend of spices that I could make up myself to flavour my dish. I chose this recipe from the One Green Planet website. Once I'd made my spice mix I decided to dispense with the fish curry recipe all together and fashioned my own Caribbean chicken and butternut squash curry, served with rice.
