I followed on from yesterday's Pork Pibil with another Mexican dish today. Offering an alternative to chilli con carne, chicken mole combines chillies, spices, raisins and seasoning to create a smooth, dark velvety sauce enriched with squares of chocolate.
With its five star rating and good selection of reviews, I settled on BBC Good Food writer, Cassie Best's recipe.
This mole needs 30 minutes prep and a good 2 hours cooking time, so it's definitely not a quick supper option. My daughter's hockey practice affords me a little more cooking time on a Monday evening, otherwise, I would have saved this one for the weekend.
After a long and tiring day, I was able to dish up a spicy, smoky bowl of deliciousness.
