A busy Friday called for sandwiches for supper. But not just any sandwiches. Chicken tikka on sourdough.
I chose Cyrus Todiwala's recipe from the BBC Good Food website. Proprietor and executive chef of family-run Café Spice Namasté in Whitechapel, Cyrus draws on his Parsee heritage, Mumbai upbringing and his early career as a chef in Goa to deliver recipes that span the Indian subcontinent.
In his chicken tikka recipe boneless chicken pieces are marinaded overnight in yoghurt with fresh ginger, cumin, coriander, chilli powder, turmeric, lime juice, tomato purée and garam masala. The chicken is then basted regularly in the yoghurt dressing while grilling.
Absolutely delicious, it made a meal of the humble sandwich.
