Inspiration this evening came from Nigel Slater's 'the kitchen diaries'. A well thumbed tome and an old favourite, it contains one of my pet lunch party deserts; lemon frosted pistachio cake. But dinner called, and I'd decided to try a new (to me) recipe; Nigel's chicken with mushrooms and lemongrass.

It did exactly what it said on the tin; it was "hot, fast and refreshing", though I take issue with Nigel's suggestion that it's an instant supper. There was some fine shredding and chopping to be undertaken, before the ingredients hit the pan. But perhaps it was my decision to prepare the constituent parts before cooking that slowed me down.

Generally well received, this evening we enjoyed a tasty supper, introducing the kids to lemongrass and cooking with it for the first time in 2020.
