I took a leap of faith with this recipe for cold courgette salad. My husband isn't a great fan of courgettes unless they are sautéd with mushrooms and garlic and I've yet to serve them successfully to my kids.
Despite my foreboding, two gifts incentivised me to give courgettes another shot with this salad recipe. Firstly, a colleague presented me with a couple of homegrown courgettes from her garden. Having been gifted the veg, I felt duty bound to use it to good effect. Secondly, my mother is visiting and she bought with her an old spiralizer.
I've long fancied a dalliance in turning vegetables into spaghetti, but hadn't ever made the (modest) investment in the tools to do so. Having been given a spiralizer, I couldn't wait to try it out.
This cold summer zucchini noodle pasta salad recipe loads courgette spaghetti with some of my favourite ingredients; blueberries and fresh corn. It also includes feta which simply doesn't get through the door in our house. It's not that we don't like salty cheese, halloumi is one of our favourites and I'm conscious that research reveals how our likes and dislikes when it comes to food can vacillate in surprising ways. Nevertheless feta was substituted for Greek squeaky cheese in my version of this salad.
The lime, honey and basil dressing made for a zingy spaghetti bowl eliciting appreciative sounds from my daughter ("we HAVE to have this again") and the slurping sounds of noodles being sooked up without coming up for air.
Definitely a recipe contender for the favourites list.
