Having introduced us to the Twisted cookbook (yesterday we were literally in raptures over the butter chicken lasagna), my friend Tina's son Harry also shared the Twisted team's recipe for fajita cake. Just the concept of this appealed on so many levels but simply put, what's not to love about Mexican food piled high?

It's always gratifying when something you cook looks good on the plate and I was pleased with my version of this recipe - until I saw 14 year old Harry's below!

The only thing I'd flag with this recipe is the need to get the temperature right. Despite the requisite cooking time, my cake slices were lukewarm on the plate and I like my Mexican food hot hot hot! Harry's fajita cake was also tepid when it hit the table - so bear this in mind if you're recreating this dish for a fun Mexican mealtime.
