One of the benefits of cooking a roast dinner, is the feel good factor of a leftovers meal the next day. Eking out a dish into multiple days doesn't just benefit your pocket. And it's not necessarily about having the same thing for a few days in a row. Leftovers are also a great opportunity to introduce something different at dinner time.

Keen to use the remainder of our pork from Saturday's roast to maximum effect, I decided to try a fried rice recipe. I probably would have made this dish as it appears online, and feel a modicum of guilt for modifying Hannah Chia's vegan recipe, but pork just seemed like a perfect addition.

And it was truly delicious.
