What this evening's meal lacked in cultural consistency or the homogeneity of geography it made up for with bags of flavour. Miso chicken was at the centre of the dish and this James Ramsden recipe from Sainsburys Magazine was superb (I literally can't wait for 2021, when I can make it again). The brothy umami flavour gave the chicken a satisfyingly deep meaty flavour. The accompanying salads utilised what was available in the fridge, as well as featuring a personal favourite, coleslaw. All together it was one of those healthy meals that tastes so good, you're sure it must be bad for you.
