Salads have featured predominantly at dinner times so far in 2020, and this miso orange and courgetti combines two ingredients that have been new to our table this year; spiralised vegetables and miso.

This vegan recipe comes from Izy Hossack's website topwithcinnamon and the star of the salad is most definitely the dressing. Combining orange juice, miso paste, garlic, tamari, oils and cider vinegar it transforms a bowl of veggies into a refreshingly tasty salad.

One of the perks of tonight's dinner was that in addition to a new tasty supper, the leftovers also enabled me to meal prep my lunches for the rest of the week.
