Up until today I've never considered the potato salad anything other than a side dish. This is probably because all I have ever done is stir ready made mayonnaise and chopped chives through cooled boiled potatoes. That's a potato salad, right? Perfectly acceptable and tasty, but definitely a supporting player on the plate rather than the main act.
This potato salad with bacon doesn't rely on mayo (so it is a great choice to take to a BBQ) and is more reminiscent of the German style potato salad dressed with a vinaigrette. Bacon, sweetcorn and spinach help give the dish a 'salad' identity rather than simply being a potato side.
I guess it depends on how hungry you are. It's perfectly acceptable on its own, but will also work as a substantial accompaniment when there are ravenous hoards to feed.
