Back in 2011 I bought my husband Felicity Cloake's 'Perfect' book - 68 essential recipes for every cook's repertoire. I knew he read her column in The Guardian and we both loved her concept of trying and testing established cooks' recipes and pulling together the best of the best to create the perfect version.

If I decide to tackle a 'classic' then I will often check to see whether it has come under Felicity Cloake's scrutiny. Sure enough she has examined the onion tart and offers the perfect recipe here.

This Alsace-Lorraine classic consisting of shortcrust pastry filled with sweet onions and bacon in an egg custard, was well received all round, with plenty left over for lunch (even better!).
