Tonight's meal was planned for yesterday but after a trying day, my husband intuitively suggested that I forget cooking for the night and he ordered a take away instead. After salivating at the thought of a Chinese meal cooked by someone else we realised it was Tuesday - the only day of the week that The China Palace is closed. In light of this disappointment we embraced the idea of an Indian meal with more gusto than necessary and consequently over indulged in samosas, onion bhaji, lamb dansak, peshwari nan and popadoms. Consequently I didn't sleep as well as I might otherwise have.
Hoping for a more restful night's sleep tonight I opted to make this lighter recipe from BBC Good Food online. I substituted the chard for spinach, due to availability, and used fine polenta (as I had this to hand) so my version did have a longer (50 minutes) cooking time.
Creamy parmesan and parsley loaded polenta topped with a firm white egg with a gooey yoke and scattered liberally with crispy chorizo was certainly tasty. And it made for a different kind of easy comfort food.
