Gammon is a firm favourite in our house and roast ham with baked potatoes and coleslaw features on our 2015 list of meals on rotation. Throughout 2020 I have been on the look out for different ways to prepare and serve gammon and this recipe was a lucky find.
Waiting to be served in the post office last week, I picked up a copy of the November 2020 issue of Delicious magazine and was excited to stumble on this recipe for pulled ginger beer gammon.
The recipe combines several of my favourite foods from the ham itself to ginger beer and pomegranate seeds. Together, the flavours promised a sensational salad and that's just what we got, in addition to a bright and colourful plate.
I'll definitely be using this evening's supper as inspiration for our Christmas/New Year ham leftovers.
