Between March 2013 and May 2014 we ate a lot of Stoofvlees courtesy of our Belgium au pair Joke (pronounced Yo'ka). We haven't cooked it since she went off to become an air hostess, but when I stumbled on this recipe for her National dish, it felt like an addition to our list of 292 meals for 2020 that would prompt rekindled memories and fond reminiscing.

I made our Flemish beef stew on Sunday and left it overnight so it would benefit from a deepening of its flavours (as per the recipe). Reheating it this evening, it tasted better than I ever remembered, possibly helped by a kg of exceptionally good organic Aberdeen Angus stewing steak from Windshiel Farm.
