After a few meat-heavy evening meals, a veggie salad was the order of the day. I loved the prebiotic qualities of this super seedy salad recipe by Adam Bush which appeared in Olive Magazine.

I've always got the ends of stale sourdough loaves in the bread bin (I usually whizz them into breadcrumbs and freeze) and I already had many of the store cupboard items on hand, leaving just the fresh vegetables to pick up, making this a really cheap evening meal. Plus you can't help feeling good about yourself after eating this uber healthy salad!
