I'm not quite sure why August has seen me inspired to add a few Mexican-style evening meals to dinner time, but following Pork Pibil, and Chicken Mole, I decided to make Thomasina Miers' recipe for blistered sweetcorn with mole and crisp chorizo.

This recipe could work as a healthy veggie mole option if you leave out the chorizo. Despite its high fat, high calorie, high salt content, chorizo does score highly on taste as well as its low-carb credentials so I was happy to top this dish off with lots of crispy Mexican sausage.

Served on its own, as I did, it is the perfect starter for a Mexican themed dinner menu, or add a salad and tortilla for a more substantial main course.
