Miso is an ingredient I hadn't used before I started my 292/365 challenge (to cook 292 different evening meals over the course of the year) on the 1st January 2020. While Asian populations have been consuming fermented soy since ancient times, miso is a relatively new addition to the average British kitchen and I have definitely been behind the curve here.

A number of meals I have cooked this year have featured miso and I now keep a jar in the cupboard ready for the next time it appears on an ingredient list. Tonight's tahini miso salmon recipe is an easy dish with subtle flavours that don't detract from the salmon yet lift it from being simply a baked fillet of fish.

Its ease, speed and individuality made it a mid-week win win for me.
