Noodle bowls are incredibly easy to make and this recipe from the Nourish Everyday website is exceptionally tasty. I chose to use chicken for protein accompanied by lots of fresh salad vegetables. The dressing is perhaps a little naughty combining 3 tbsp of crunchy peanut butter with soy sauce, rice wine vinegar and maple syrup (I used dark agave instead) but with so many healthy veggies in the bowl, I was happy to embrace little dressing decadence.
