I've long been a fan of the one pot meal (my single Le Creuset cast iron casserole (a wedding present in 2002) displays all the signs that this is indeed true (although it's improved in looks since I replaced the lid handle)).

Tonight's meal offered a distinctly Southeast Asian spin on the traditional beef casserole.

The citrusy flavour of lemongrass mixed with a hint of lemony mint, alongside red chillies and lime deliver a fresh quality to this slow cooked Vietnamese inspired beef dish.

I threw in some green beans for added vitamins, minerals and fibre and served with 1/2 a  roasted sweet potato.
